Biscocho

Biscocho, often spelled "biskotso," is a versatile term in Filipino cuisine, encompassing various baked goods.However, its most common and widely understood meaning refers to a twice-baked bread, much like Italian biscotti. 1   This process involves baking a loaf, slicing it, and then baking the slices again until they are dry and crisp.  This double baking is what gives biscocho its signature hard, crunchy texture and significantly extends its shelf life. While the classic biscocho is a dry, crunchy bread, regional variations exist.
