Ugoy-ugoy (sometimes spelled ogoy-ogoy) are a type of Filipino layered biscuit, known for their flaky texture and sweet topping.  They are typically rectangular or ribbon-shaped, though variations may exist. The defining characteristic is the multiple thin layers of dough that give them a light and airy quality.  These layers are often brushed with a sweet glaze or simply sprinkled generously with granulated sugar before baking, creating a slightly caramelized, sweet crust.  While associated with various regions in the Philippines, they are particularly popular in Iloilo.  They are enjoyed as a snack or dessert and are often given as a pasalubong (a gift or souvenir).
