CONSILVA | PINASUGBO / by Sweet Cravings

Pinasugbo, also known as consilva, is a cherished Filipino dessert originating from the Western Visayas region.  Its core ingredient is the saba banana, thinly sliced and deep-fried to a perfect crisp. These crispy banana slices are then generously coated in caramelized sugar, creating a rich, sweet glaze with a beautiful shine.  A sprinkle of sesame seeds adds a delightful nutty flavor and a contrasting texture that complements the sweet coating.  Traditionally, pinasugbo is sold in convenient white paper cones, making it a portable and easy-to-eat snack. The magic of pinasugbo lies in the interplay of textures – the crisp banana against the chewy caramel – and the balanced flavors – the sweetness of the sugar harmonizing with the subtle banana taste and the nutty sesame seeds.  Beyond its deliciousness, pinasugbo holds cultural significance in the Western Visayas, enjoyed as a snack, dessert, and a popular "pasalubong" for visitors.
