Piaya, a beloved treat from Bacolod, is a popular "pasalubong" (a gift you bring home from a trip) often given to friends and family.  This unleavened flatbread is made without yeast or baking powder, using a simple dough of flour, water, and shortening.  The traditional filling consists of a ball of muscovado sugar, and the piaya is cooked on a griddle over low heat.  Creative variations include fillings like ube (purple yam) and mango.
