Authentic Kansi Recipe from Bacolod City

A Filipino beef soup that originated in Iloilo and is popular in the Western Visayas region. It's made by boiling beef shank and bone marrow until it's gelatinous, and then adding a slightly souring fruit like batuan or bilimbi.
Ingredients

For Atsuete oil:
1/2 cup Canola oil for atsuete oil
1/4 cup atsute oil
